Currently I am reading a book which I would suggest to EVERYONE to read, called Real Food, What to eat and Why by Nina Planck. It is an incredibly easy read, and she speaks in a way everyone can understand without big scientific terms. While I am only 60 some odd pages into the book... I am already learning so much that I would love to share with you all!
It seems more and more we are being fed super this, and super that..... things that are fortified with this and that... or things that have low fat or no fat....... what ever happened to eating real, honest to goodness food? Food that is local, food that is grown in a natural way, not hanging in the air through a hydro-system, or covered in pesticides, or genetically modified to maintain color or integrity longer. What happened to the days of people growing their own food, raising their own animals, and living off their own land? Well unfortunately, we can't live that way in today's urban society, but we can do a small part to revert back to living that way.

In Nina's book, she has a section where she talks about real milk, butter, and cheese. She gives us a run down on all the health benefits of raw dairy vs. modified dairy. Here I would like to share some of those with you...
Positive Things In Raw Milk
Complete protein to build and repair tissues and bones
Vitamin A for healthy skin, eyes, bones, and teeth
Vitamin D to aid calcium and phosphorus absorption and for bones and teeth
Thiamine to help turn carbohydrates into energy and aid appetite and growth
Riboflavin for healthy skin, eyes, and nerves
Niacin for growth and development, healthy nerves, and digestion
Vitamin B6 to build body tissue, produce antibodies, and prevent heart disease
Vitamin B12 for healthy red blood cells, nerves, and digestion; and to prevent heart disease.
Folic Acid to promote the formation of red blood cells and prevent birth defects and heart disease

Lacks the cream which contains the vital fat-soluble vitamins A and D.
Less than 10% of dietary calcium is absorbed
Store bought skim milk is made from dried skim milk powder and water
The LDL cholesterol in skim milk is altered in the drying process in such a manner that is actually harms the body by raising the body's LDL levels (raw milk does not)
By law all industrialized skim and 2% milk must be fortified with SYNTHETIC vitamins A & D
Both SYNTHETIC vitamins can be toxic in excess
Lacks glycosphingolipids, fats that protect against gastrointestinal infections which naturally occur in milk
*Children who drink skim milk have diarrhea at rates three to five times higher than children who drink whole milk according to Sally Fallon and Mary Enig in Eat fat, Lose Fat.
As you can see we are doing ourselves a great injustice by consuming modified industrialized milk and milk products. We can't all have our own cows at home, but we can purchase organic milk products or even raw organic milk products. This way we will give ourselves the best undiluted source of so many vitamins and minerals that are sooo important in so many ways to our growth, health, and development.
